    Abstract: A grease collector housing is mounted directly atop a filter-containing kitchen exhaust hood at the exhaust collar. The housing includes a liquid reservoir at the bottom, a 360 degree shallow conical spray head immediately above the reservoir, an array of baffle-type grease filters above the spray, a filter-cleaning spray head above the array and a connector above it to the exhaust duct. A detergent water supply and removal system includes a pump and associated valving for moving a water-based solution through the spray heads and sprays as and when needed to remove grease from kitchen exhaust fumes and to wash down any residual grease from the filters and reservoir in the housing. A disposable cartridge-type water filter is included in the recirculating liquid system. Controls automatically provide the proper valve operating sequence for the operations as and when needed.

    Abstract: A kitchen exhaust hood covers the top of an oven and food conveyors which extend on both sides of the oven. Plates in the hood cooperate with the walls of the hood to provide slots at the hood front and sides to accelerate the air under the plates adjacent the slots and provide high velocity exhaust air flow upward in the hood at the front and sides of the hood to capture heat and fumes. The plates are located slightly above the lower edge of the hood, to minimize induction of room air horizontally into the hood under the edge, and assure collection of air that has been associated with the oven and has accumulated heat or collected contaminants. Air flow guides at ends of a conveyor direct heat and fumes around the ends of the conveyor toward the conveyor covering hood portions.

    Abstract: An exhaust-only type of kitchen exhaust hood is provided with removable fume-guide plate upstream of the in-hood grease filters. The plates are shaped to provide a forward flow of fumes from the rear of the hood forward over the cooking unit toward the front lip of the hood. A slot is provided between the front edge of the plate and the front wall of the hood whereby the air flow into the hood accelerates around the front edge of the plates to provide a flow rate of approximately 200 feet per minute at the front edge of the hood. Slots are provided between the hood ends and adjacent side edges of plates next to the ends. The plates are movable to facilitate changing of filters.

    Abstract: A kitchen exhaust apparatus is disclosed herein which comprises an enclosure having a bottom opening with a plate mounted in the opening to define an exhaust opening, a filter mounted within the enclosure, and air inlet and exhaust means for directing air from outside the enclosure to the exhaust opening and subsequently through the filter and out of the enclosure. In another aspect there is disclosed a combination cooking unit and exhaust apparatus mounted above the cooking unit.

    Abstract: A kitchen exhaust system has an outside air supply blower and a hood exhaust blower discharging outside the building. Air is introduced from the supply blower into the area behind the cooking unit and the exhaust is taken through a removable flow director or guide secured to the typical exhaust hood. The flow guide has an inlet located toward the front of the cooking unit and relatively near the top of the cooking unit and has convenient release devices to facilitate removal of the guide from the hood to facilitate removal and replacement of filters or grease removing devices from their usual disposition in the hood assembly. The shape of the flow director is such as to provide a high velocity of the fluid flow adjacent the intake opening and thereby provide more effective scavenging action for combustion products and cooking fumes than is typically found with an exhaust unit unassisted by the flow director of the present invention.

    Abstract: A kitchen exhaust system has an outside air supply blower and a hood exhaust blower discharging outside. 80% of the air discharged by the exhaust blower is taken from the intake blower through cooktop level and overhead supply outlets in the hood, and 20% is taken from the room. The supply discharge outlets are arranged to provide a venturi action removing smoke and fumes from over the cooktop.
