Abstract: A coffee machine includes: a filter holder suitable for containing at least one coffee dose; a dispensing unit with dispensing nozzles suitable for sending a flow of hot water on the coffee dose; a water system provided with a pump to supply pressurized water towards the dispensing nozzles; a heater to heat the water to be supplied to the dispensing nozzles; a dispensing valve to enable/disable the supply of hot water towards the dispensing nozzles; a pre-infusion valve installed upstream the dispensing valve; and a control unit comprising actuation means to actuate the pre-infusion valve. The pre-infusion valve is a two-way electrovalve of programmable proportional type.

Abstract: A steam production system for professional coffee machines includes a nozzle; a boiler for producing steam in flow communication with a water source and the nozzle. The boiler is equipped with an independent heating device for the initial production of steam. The system further includes a heating assembly to instantaneously produce steam in flow communication with the boiler and/or the nozzle. The heating assembly includes an electric heating element; a heat exchanger associated with the electric heating element; and a water passage circuit associated with the heat exchanger which has an inlet joined to a water supply source or to a duct arriving from the latter and an outlet of the produced steam connected to the boiler and/or to the nozzle. The system also includes a programmable electronic unit operatively connected to the boiler and to the heating assembly to ensure the supply of steam to the nozzle.

Abstract: A heat exchanger includes a body placed inside a discharge container of a solenoid valve of a machine for coffee dispensing. The body includes: a first portion presenting a collection cavity of a hot waste fluid coming from the solenoid valve of the machine and defining a first surface arranged to come into contact with the hot waste fluid and a second surface facing the opposite side from the first surface; and a second portion presenting a primary surface in contact with the second surface of the first portion and a secondary surface opposed to the primary surface, arranged to come into contact with a heat exchange fluid of the machine having a different temperature from the temperature of the hot waste fluid. The first and second portions allow heat exchange, by conduction, between the hot waste fluid and the heat exchange fluid of the machine.
