    Abstract: A process for producing optically pure N-acyl-L-methionine comprising (1) subjecting an N-acyl-D,L-methionine ester to the action of a proteolytic enzyme selected from the group consisting of sulfhydryl proteinases and microbially derived serine proteinases; and (2) separating the resulting N-acyl-L-methionine. The N-acyl group can be chemically removed to provide L-methionine.
