    Abstract: A plurality of natural or LP gas-fired burners each having a port construction which produces a substantially even distribution of heat over the cooking surface of a griddle top is disclosed. Each burner includes a longitudinally extending portion having a first and a second series of ports, each series being positioned in a substantially linear orientation and each positioned substantially parallel to one another and to the longitudinal axis of the longitudinally extending portion of the burner. Each series of ports include a first grouping of ports having an orientation with respect to normal so as to produce flames directed toward the front of the griddle top and a second grouping of ports having an orientation with respect to normal so as to produce flames directed toward the rear of the griddle top. A pilot flame or gas ignition device is positioned at the transition point between the first plurality of ports and the second plurality of ports.

    Abstract: A natural or LP gas-fired laminated griddle top structure providing an even distribution of heat over its cooking surface is disclosed. The griddle top includes an upper plate formed from a relatively thick iron or steel plate and a plurality of relatively thick lower plates formed from a dissimilar material having a high thermal conductivity. A thermal break is provided between adjacent lower plates and each lower plate has a channel provided therein for the receipt of a temperature sensing device. In addition, laterally extending grooves are provided in the bottom surface of the lower plates increasing the resulting heat transfer surface improving the thermal efficiency of the griddle top. One or more natural or LP gas-fired burners and associated controls are provided adjacent each lower plate permitting the entire cooking surface to be maintained at the same temperature or portions thereof to be maintained at different temperature, if desired.

    Abstract: Gas-fired cooking apparatus comprising a combined griddle and broiler unit, including a hinged broiler heat source which can be selectively raised or lowered over the cooking surface of the griddle is disclosed. The heat source is ignited by an electro-mechanical system responsive to the position of the broiler top, and which ignites the heat source only when the top is lowered. An exhaust system is provided for removing combustion products from the cooking surface.

    Abstract: A top burner for a gas cooking range includes a burner vent having a radially upwardly sloping wall surrounding the burner head. An annular ring projects upwardly from an inner radial extremity of the wall to direct combustion products from the burner head into immediate scrubbing contact with the bottom of a cooking utensil. The wall terminates at an outer radial extremity adapted to be located in sufficiently close proximity with the bottom of the cooking utensil to restrict radially outward flow of combustion products. Capture ports adjacent the outer radial extremity of the wall exhaust combustion products through a vent pipe to the atmosphere at a positive pressure. A range oven/broiler may also be connected to the vent pipe to provide a fully vented range.

    Abstract: A deep fat fryer includes an open-top vessel having at least one trough-shaped container adapted to hold a quantity of cooking oil. A pulse combustion burner is provided for heating the oil and includes a combustion chamber adapted to be immersed in the oil. A mixer head receives controllable air and fuel flows and an ignitor within the mixer head initiates combustion. A cabinet is provided for supporting the vessel and the burner. A tailpipe receives the combustion products and carries the same into an exhaust decoupler which is located adjacent the inlet end of the combustion chamber and which substantially enclosed the mixer head and at least a portion of a vent pipe. The exhaust decoupler and the tailpipe are arranged in heat exchange relationship with the vessel wall. A continuously operating air blower is provided to minimize burner start-up time and to cool electronic control circuitry used to regulate the oil temperature and the operating periods of the burner.
