  • Patent number: 6378319
Abstract: A delivery vehicle having a room temperature compartment, a freezer compartment and a refrigerated compartment. The refrigerated compartment is adjacent to the freezer compartment. The refrigerated compartment has a shared wall with the freezer compartment, and the shared wall has a fan assembly that moves air from the freezer compartment to the refrigerated compartment. A control unit allows the driver to monitor and control the temperature in the freezer compartment and the refrigerated compartment from the driver area. A room temperature compartment may share air with the driver area. In one embodiment, the room temperature compartment may be separated from the driver area by a screen.

  • Patent number: 6063426
Abstract: A dough moistening apparatus. A reservoir is disposed above a conveyor. The reservoir is operably coupled to a pump that fills the reservoir, from a tank. The reservoir has a spillway such that when overfilled, the fluid cascades onto the conveyor, thereby moistening dough items conveyed thereby.

  • Patent number: 5234705
Abstract: An apparatus for the manufacture of pita bread having a roller with a regularly wavy profile to make the pita bread thicker at the edges defining the bottom of a pita loaf, and thinner in the middle defining the open end of the pita loaf after it is divided in half. The method of making pita bread and the pita bread so made are also described.

  • Patent number: 5103719
Abstract: An apparatus for the manufacture of pita bread having predetermined pressure relief notches or slits along the perimeter thereof is disclosed. The apparatus includes a cylindrical roller having disposed on the surface thereof substantially circular blades shaped to provide the pressure relief area, including one or more notches or slits. The apparatus may also be provided with a pita perforating device, which will align with the notches or slits. In this arrangement, pita made by the apparatus and process has notches or slits which act as markers and assist in the beginning tearing of the perforations. The notches also act as preferred locations for rupturing during the baking to prevent the loaf from rupturing along the perforations or elsewhere.

  • Patent number: 4889043
Abstract: An apparatus for the manufacture of perforated pita bread is disclosed. The apparatus includes a cylindrical roller having disposed on the surface thereof substantially circular blades with a sawtooth blade disposed along the diameter of each circular blade. The blades cut from a flattened sheet of pita dough traveling along the conveyor belt a plurality of perforated pita loaves having perforations therein for convenient tearing, which perforated pita loaves do not rupture during the baking process.

  • Patent number: 4775543
Abstract: A pocket or pita bread, and method of making the same, is described. The invented pita bread comprises a pressure relief hole provided in a seam thereon to relieve the pressure formed therein by the heated air therein during baking. In the invented method, a predetermined portion of each pita bread is heat shielded during baking, preferably by overlapping each pair of pita breads or folding over an edge of the pita bread prior to the baking thereof.
