    Abstract: An outdoor oven adapted for use as an old-world style brick oven, a traditional gas grill, or a traditional charcoal grill. The outdoor oven comprises a cooking chamber, at least one gas burner positioned below the cooking chamber, a thermostat operatively connected to the burners for controlling the temperature of the cooking chamber when operated in the oven mode, means for positioning at least one removable cooking tile above the burner, a subfloor mounted to the oven housing between the burner and the cooking chamber. The subfloor has a plurality of openings formed therein through which heated air flows upward toward the bottom surface of the cooking tiles from the burners; and at least one removable insert portion and an outer portion mounted to the oven housing. The oven further provides means for supporting at least one removable grill rack above the burner for use when operated in the grill mode with the cooking tiles and removable insert of the subfloor removed.
