    Abstract: A mannitol oxidoreductase is isolated from vascular plants which is NAD.sup.+ dependent and which converts mannitol to mannose. A preferred source of the mannitol oxidoreductase is Apium graveolens, particularly Apium graveolens L. var. rapaceum (Mill.) Gaud. (celeriac) and Apium graveolens L. var. dulce (Mill.) Pers. (celery). DNA encoding of the mannitol oxidoreductase may be used in the production of the enzyme.

    Abstract: Fresh whole produce is placed in a container and continuously purged for about 30 to 120 minutes with oxygen or carbon dioxide gas. The container is then filled with a brine solution and the produce allowed to stand for a period of about 2-24 hours, thus resulting in superior pickled produce.
