Abstract: The present disclosure provides a composition and an oil comprising fatty acids. The fatty acids include saturated fatty acids selected from the group consisting of short/medium chain fatty acids, intermediate chain fatty acids, long chain fatty acids, and combinations thereof. The fatty acids also include unsaturated fatty acids selected from the group consisting of monounsaturated fatty acids, polyunsaturated fatty acids, and combinations thereof. The composition and oil can be derived from various sources including recombinant sources, whole milk powder, plant oils, fatty fish, algae, fungi, dairy products, cooking oils, and plant sources. The composition and oil can be used in an infant formula that mimics human breast milk.
