    Abstract: Method for determining the temperature of products transported on the conveyor belt of a cryogenic tunnel, comprising the following steps: —continuously measuring the surface temperature of products travelling on the conveyor belt; —measuring the thickness of a product at the point where the temperature measurement is taken; —performing the following evaluation: a. when the thickness of the product is within a certain range, then the temperature measured for said product is considered to be a reliable value; b. when the thickness of the product is outside the range, then the last temperature value of the measured product is considered to be a reliable value according to paragraph a) above; c. after a determined period of time during which the measured thickness is outside the range, it is concluded that there are no products on the conveyor belt and the temperature measurements are no longer taken into account.

    Abstract: The present application discloses a malt production method and a method for improving the antioxidant activity of malt, wherein grains are subjected to at least one steeping step, in which the grains are immersed in hydrogen water with a dissolved hydrogen concentration of 0.3 to 1.6 ppm. By using hydrogen rich water in malt production, it is possible to take into account simultaneous improvements to multiple quality indicators at the same time. The positive biological effects of hydrogen rich water are especially significant. The increased content of ?-amino nitrogen in the malt brings greater economic benefit to malt producers. Moreover, the colour intensity and turbidity of the malt are significantly reduced, effectively solving the problem of wort often being turbid. The endogenous antioxidant activity of malt, wort and even fermented beverages is increased, as desired by malt producers and the brewing industry. No additional additives are introduced during malt production.

    Abstract: A method and installation using liquid CO2 as a cryogenic fluid for transferring cold energy to products, wherein liquid CO2 is sent into a heat exchanger system including first and second heat exchangers connected in series. The liquid CO2 is supplied to the first heat exchanger where it evaporates. Gaseous CO2 from the first exchanger is supplied to the second heat exchanger. The atmosphere surrounding the products is blown across the heat exchangers to provide a cooled atmosphere with which to cool the products. The latent heat of vaporization of the liquid CO2 in the first heat exchanger and the sensible heat of the gaseous CO2 in the second heat exchanger satisfies the cooling requirement of the products. The first exchanger is kept at a pressure higher than the triple point pressure for CO2, whereas the second exchanger is held at atmospheric pressure or at a pressure between the triple point of the fluid and atmospheric pressure.

A data acquisition and processing unit receives the temperature information and controls the opening of the proportional valve.
