    Abstract: Monounsaturated fatty acid compositions are made by heating isolated lower limbs of cattle in the presence of an effective amount of water and separating the oil produced to form a lipid composition enriched in C14:1 monounsaturated fatty acids. C16:1 monounsaturated fatty acids are also contained in the lipid composition with low levels of both saturated fatty acids and higher chain, i.e., C20-C22 fatty acids.
