    Abstract: A knife has plastic molded body with a handle and distal portion formed with finger-like extensions that hold a blade with its cutting edges exposed. The extensions form an atraumatic profile with the blade to facilitate cutting of an object by the cutting edge. The atraumatic profile extends along a longitudinal direction of the knife and/or a lateral direction of the knife. In one embodiment, the extensions are tapered in both a longitudinal and a lateral direction of the knife, such that there is a smooth transitional region where the extensions and the blade meet. The knife includes a sliding region proximal the cutting edge of the blade which facilitates a swift cutting motion into dough where the extensions follow and functions as part of the blade. The knife also includes a protective cover that is detachable from the knife, or is movable between a position that covers the blade and a position that exposes the blade.

The knife comprises a knife body having a top edge, a bottom edge, a proximal edge, a distal edge and a midsection between the top, bottom, proximal and distal edges. A slot extends at least a part of the way through the midsection along the length of the knife body. A knife blade extends from the bottom edge of the knife body. A blade cover is slidably mounted in the slot. The blade cover has at least one top portion that extends into the slot and two downwardly extending side portions attached to the at least one top portion. The blade cover is moveable within the slot between a first position where the two downwardly extending side portions cover the left and right sides of the blade and a second position where the two downwardly extending side portions do not cover the sides of the blade.

    Abstract: A food scoring knife is provided that is particularly suitable for scoring bread dough. The food scoring knife comprises an elongated body having proximal and distal ends and a generally rectangular end cross-sectional area with a bottom edge that extends along the length of the body The bottom edge is curved along its entire length. The knife further comprises an exposed blade having a bottom edge and proximal and distal ends. The blade extends from a portion of the bottom edge of the body near the distal end of the body. The distal end of the body and the bottom edge of the body have a junction that is curved. The curved junction extends beyond the distal end of the exposed blade. These features enhance the ability of the knife to score bread dough without tearing or adversely affecting the dough.

    Abstract: A food scoring knife of the presently preferred embodiment has an ergonomic handle portion and a head portion. A bottom edge of the handle portion is convex, while a bottom edge of the head portion is linear. During scoring, the user applies gentle pressure to the scoring knife, in particular, by placing fingers on a tapered finger rest, and at gripping indented sides of the handle portion. A tapered blade in the bottom edge of the head portion has a sharp cutting edge angled back toward the handle portion. The sharp edge slashes the surface of the food item as the scoring knife is pulled by the user. The convex bottom edge helps the user avoid dragging a bottom surface of the handle portion along the food item while scoring.
