Abstract: A filter device intended to be fitted into a deep fat fryer to filter foreign particles from the hot liquid fat used in the cooking process. The device includes a pan that contains the liquid fat in which the food to be cooked is placed. The bottom of the pan is provided with an opening through which the fat passes outwardly as the pan is lifted from the deep fat fryer. Nestled within one embodiment of the pan and extending over at least a portion of the bottom thereof is a unit which establishes in part at least one channel through which also passes the fat as the pan is lifted. Another embodiment has the unit depending from the bottom of the pan. In either embodiment, a filter, having progressively smaller sized holes, is disposed within the channel for capturing and separating ever decreasing smaller size foreign particles from the fat.
