Abstract: There is provided a method of metering monocalcium saccharate into a sugared juice. The process includes taking a sample of the juice to be analyzed, diluting the sample with alcohol in order to form a precipitate, separating the precipitate by filtration, dissolving the precipitate in deionized water, acidifying the solution obtained by the addition of phosphoric acid and metering the saccharose into the said solution. The method is usable, in particular, in sugar refining in the production of sugared juices by the alkaline diffusion process.
