    Abstract: A baking oven comprises a feeding portion having a feeding aperture for introducing dough pieces, a baking chamber and a discharge portion having a discharge aperture for removing dough pieces. In addition, a circulating air unit is provided which comprises a circulating air source generating a circulating air flow, a circulating air heating means and a circulating air guiding channel a part of which is formed by the baking chamber. A plurality of receptacles for dough pieces are mounted in the baking chamber to be freely rotatable or pivotable around a horizontal rotation or pivot axis. The rotation or pivot axes of the receptacles are located higher than the centre of gravity of the receptacles even if the receptacles are filled with dough pieces. As a result, a baking oven is provided in which the dough pieces can be distributed as evenly as possible and moved along during the baking process.

    Abstract: A charging arrangement for a baking oven (8) is provided with a supply arrangement (9) for dough pieces (4) and a lifting and delivery device (34) for the dough pieces (4). The supply arrangement (9) is provided with a charging inlet, at least one supply bin (10, 23) and a supply outlet arranged underneath the charging inlet. A delivery inlet portion (37) of the lifting and delivery device (34) that is located at the bottom is in delivery engagement with the outlet of the supply arrangement under the influence of gravity. A baking system (1) with such a charging arrangement (9) can be easily operated and does not require the continuous presence of an operator. Furthermore, it can have an optically attractive design.

A payment transaction is recorded by means of a second recording unit. A baking device serves the baking of raw dough pieces pursuant to the customer's request to ready-baked dough pieces. The ready-baked dough pieces are made available in at least one supply bin that is accessible to the customer. Two delivery units serve the delivery of the raw dough pieces and/or of the ready-baked dough pieces from the first supply bin to the baking device and/or from baking device to the second supply bin. Depending upon the data recorded by the recording units, a control unit controls the delivery units and the baking device.

The separation unit (26) comprises a container (28) having a container bottom (31) which is divided into a round inner portion (33) to which the dough pieces (2) are delivered and an outer portion (34), extending at least partially around the inner portion (33). The outer portion (34) can be caused to rotate relative to the inner portion (33) around an axis of rotation extending perpendicular to the container bottom plane and is arranged in conveying connection with the outlet portion (27). Such a separation device reliably separates a plurality of dough pieces.

An outer wall of the baking chamber is rotationally symmetrical about a vertical axis of rotation, expanding steadily upwards in particular in the shape of a funnel. A baking oven results, in which the dough pieces can be moved and distributed as regularly as possible during baking.
