    Abstract: A wafer baking oven for making baked wafers from batter includes an elongated baking chamber with heating elements therein. A thermally insulated enclosure surrounds at least part of the baking chamber. The oven includes a front port adjoining the baking chamber. There are a plurality of baking tongs in the baking chamber, which baking tongs move through the baking chamber and into and out of the front port in a running direction. The baking prongs are openable when in the front port for the removal of baked wafers from the tongs and for charging the baking tongs with batter. The baking tongs are then closed and are moved through the baking chamber in the closed state. The front port includes a charging station for charging the baking tongs with batter and a discharge station for discharging baked wafers along a path.

    Abstract: A wafer baking oven has a set of baking tongs which move through the oven to effect baking of the wafers. The oven is particularly for wafer products such as flat wafers, low hollow wafers, sugar cones, wafer cups and wafer figures. There is a baking chamber through which the baking tongs move and a front end at which baked wafers are discharged from the baking tongs and fresh batter is poured into the tongs for baking. The region in which this takes place is referred to as a front port. The front port includes a batter pouring station and a discharge station with a chute and at least one discharge spider. To reduce loss of heat and to reduce the noise level of the wafer oven, the front port is surrounded by a housing which comprises, at least in part, an enclosure attached to a frame. The housing has two passage openings at the side which face the baking chamber, and the baking tongs pass through these passage openings as they move in a circuit between the baking oven and the front port.

    Abstract: Cream-coated wafer sheets are conveyed by a feeder conveyor in a first plane to a stacking device. The coated wafers are raised in the stacking device into a second plane and by such a raising are attached to the lower sides of a wafer sheet already in the second plane to form a wafer block which is in a raised position with respect to the feeder conveyor. An uncoated covering wafer sheet is separately supplied to each wafer block such that the covering sheet is delivered directly into the second plane at the stacking point, and a coated sheet is attached to the lower side of this covering sheet by rising up into a position in which its cream coating contacts the lower side of the covering sheet. This separate, direct supply of the uncoated covering wafer sheet is effected by a covering sheet conveyor disposed above the feeder conveyor. The terminal end region of the covering sheet conveyor ends in the second plane at the upstream side of the stacking device.

    Abstract: A steam sealing strip for closing open edges between opposed upper and lower cooperating wafer baking plates includes an upper sealing strip portion for coupling with the upper baking plate and a lower sealing strip portion for coupling with the lower baking plate. The baking plates define therebetween a primary wafer baking space for the baking of dough. The upper and lower sealing strip portions provide secondary baking surfaces disposed in opposed, spaced, face-to-face relationship. These secondary baking surfaces define a secondary baking space for baking excess dough which flows from between the baking plates during the baking of wafers. By baking this excess dough, the formation of unbaked dough portions or unbaked dough balls is prevented. The sealing strip includes a plurality of steam channels for releasing steam from between the baking plates. These steam channels open into the secondary baking space.

    Abstract: A process and apparatus for manufacturing waffle blocks filled with cream in which individual waffle sheets are moved on a feeder belt into contact with a coating device for coating on one side and are introduced subsequently into a stacking device where they are individually lifted by at least two oppositely mounted upright spiral feeders that grip the waffle sheets and guide them upwardly in succession against each other until a waffle block composed of a predetermined number of waffle sheets is completed. The completed waffle blocks are pushed by the spiral tracks on a run-off belt and discharged.

The transporting of the wafer blocks is accomplished by one or more endless revolving members carrying a plurality of pressure components. The endless revolving transport members may be mounted either above or below the plane of transport and extend into the plane of transport during movement of the wafer blocks toward and away from the cutting member or members.

    Abstract: A process for manufacturing hollow, thin-walled pastry articles, particularly cone shaped waffles, wherein a kneadable, firm dough body is conveyed to a plurality of baking molds of a cone baking apparatus, each baking mold consisting of a matrix and a patrix, the dough body being delivered into each matrix. The patrix or core of the mold is lowered into the matrix to distribute the dough body over the matrix wall, and is raised again to allow the escape of air and vapor developed by the dough body during baking. The lowering and raising operation of the patrix core is repeated several times and the patrix core remains in the lowered and raised position at varying intervals. The patrix is finally locked on the mold and after final baking the mold is opened and the finished hollow, cone shaped waffle is released.
