    Abstract: A process for whipping an homogenized emulsion comprised of fat, protein, emulsifier, stabilizer and water. The emulsion is aerated in a continuous mixer. The aerated emulsion is then pressure reduced in a gradual manner and whipped under pressure. The whipped emulsion is then reduced to atmospheric pressure wherein the temperature of the whipped emulsion upon reaching atmospheric pressure is from about 46.degree. F. to 60.degree. F.

    Abstract: The object of the invention is to improve the palatability of soy-containing dog foods.It is difficult to make foods which are both low in cost and palatable to dogs. Soybeans provide a range of economical proteinaceous materials and are widely used in dog foods. When made under normal processing conditions, these soy-containing dog foods are less palatable than is desired. The present invention improves these foods by selectively treating the soybean proteinaceous material to improve its contribution to the overall palatability of the dog food, thereby improving the overall product palatability. According to a preferred aspect of the invention, soybeans are selectively treated by roasting followed by quenching with a fat, such as soybean oil, added in an amount of about 2 to 15% of the weight of the soybeans.

    Abstract: A beverage-bottling method for non-carbonated beverages. An inert gas, other than carbon dioxide, such as nitrogen, is injected into a non-carbonated beverage prior to filling a container. Inert gas is permitted to escape from the beverage in the filled container before sealing the container. The amount of gas released is sufficient to strip dissolved oxygen from the beverage and then purge air from the headspace of the container. Sufficient gas is retained in the beverage to exert a superatmospheric pressure after the container is sealed. The reduction in oxygen content of the headspace is superior to that achieved with using a stream of nitrogen purging gas into the headspace, while dissolved oxygen is substantially reduced and internal container pressure is increased, the latter being a distinct advantage in containers made of flexible material such as sheet metal and plastic.
