  • Publication number: 20030064142
Abstract: The present invention concerns a process for preparing a dried soluble culinary foamer powder. The process includes the steps of preparing a concentrated culinary solution to provide a concentrated solution having a solids concentration above about 50% by weight; foaming the concentrated solution to an overrun of at least about 200% for providing a foamed solution; drying the foamed solution, preferably in a convection dryer, at atmospheric pressure and for a time that is sufficiently rapid to provide a dried foamed product, and comminuting the dried foamed product to soluble culinary foamer powder. The soluble culinary foamer powder is particular suitable in preparation of culinary products based on dry base powder such as dry sauce or sauce base which is brought to boiling when being prepared.

  • Publication number: 20030008059
Abstract: The invention concerns a process for preparing a dried soluble beverage product from beverage liquor. The process includes preparing a concentrated beverage liquor to provide a concentrated liquor of a solids concentration above about 50% by weight; foaming the concentrated liquor to an overrun of at least about 200% for providing a foamed liquor; stabilizing the foamed liquor for providing a stabilized foam; and drying the stabilized foam for providing a soluble beverage product. The invention also relates to a dried beverage product of particles of a dried beverage base. The particles have a clearly identifiable foam structure that is substantially free from structures produced by ice crystals during in the drying of the product.

  • Patent number: 5600996
Abstract: To measure the leakage rate in hollow bodies, the throughflow rate of the air flowing into the leaky hollow body is automatically measured and indicated numerically at a given test pressure. This is achieved by feeding fluid from a prechamber filled with fluid under measuring pressure to two measuring chambers (4,5) equipped with a testpiece and reference housing and having an identical cavity. The pressure decrease in a prechamber (1) is thereupon evaluated as a measure of the accessible volume in the two measuring chambers (4,5) and is compared with the volume given as permissible. If the measured accessible volume is higher than the volume given by the size of the chamber, the testpiece is qualified as highly leaky. If the volumes in the two chambers (4,5) correspond to one another, the chambers (4,5) are separated from the prechamber and the pressure difference between the chambers (4,5) and its trend in time are detected, in order to determine from this a measure of the tightness of the testpiece.
