    Abstract: Method and apparatus for cutting out and plugging the anal orifice of slaughtered animals in any slaughtering facility. The method comprises cutting out the rectum of the animal with a cylindrical cutter arranged around a centering mandrel and provided with side openings for immediately removing any waste matter that becomes stuck within the cutter, and injecting ground fat or a similar material into the anus with a pressurizing device controlled by automation equipment of the facility. The device is connected via a flexible duct to an inner channel in the centering mandrel for the tool for cutting out the rectum. The method and apparatus are suitable for use in any slaughtering facility, particularly high throughput abattoirs.

    Abstract: A method of automatically cutting longitudinally animal carcasses for food. A mobile holder is horizontally moved transversely in one direction with respect to a conveyor chain until a first bearing element is brought opposite the inner surface of the animal's vertebral column, a second bearing element is pivoted and pressed against the outer surface of the vertebral column, cutting means is actuated, the mobile holder is moved vertically downwards until the cutting means reaches a predetermined position with respect to the carcass. The mobile holder is then moved horizontally and transversely in the other direction with respect to the conveyor chain, after which the mobile holder is moved vertically upwards to a predetermined position.

    Abstract: The present invention relates to a process for eviscerating animal carcasses. A carcass, carried by a conveyor chain, is sensed by a positioning mechanism. A cutting tool is placed and actuated to open the body cavity, permitting access to the viscera. As the carcass is moved along by the conveyor chain, it is pivoted, and the viscera drop into a divided receiving hopper by stages.

A bucket conveyor and motorized digging attachment are carried on a rigid structure which is vertically adjustable with respect to a sub-frame of the carrier.
