  • Patent number: 9930895
Abstract: A twisting apparatus comprising a loading device intended to load a food product into a casing, and a braking device, is described. The loading device comprises two tubular filling bodies, or filling tubes, intended to support the casing and a twisting device intended to rotate each filling tube about its axis, and a movable frame or carriage able to support the loading device. The twisting apparatus includes a rotation unit intended to cause rotation of the loading device and angularly displace the two tubular filling bodies with respect to the braking device. Also provided is a displacement drive member connected to said movable frame or carriage so as to move with an approaching and separating displacement, or to-and-fro movement, the two tubular filling bodies away from and towards the braking device. The rotation unit includes a rotation drive member fixed to said movable frame or carriage and is able to be moved by said displacement drive member together with the loading device.

  • Publication number: 20140077415
Abstract: A twisting apparatus is described. The twisting apparatus has a loading device adapted to load a food product inside a casing and a braking device. A filling assembly is adapted to support the casing. An inlet conduit is provided for feeding the food product into the filling assembly. The inlet conduit is structurally separate from the passage duct of the filling assembly and configured to assume at least one first operative position in which the filling assembly is connected to the braking device and the inlet conduit is in fluid communication with said passage duct and a second operative position in which the filling assembly is displaced in a spaced relationship or detached from the braking device.

  • Patent number: 6351927
Abstract: The invention relates to a portioning device for packaging in containers such as trays a pre-established amount of foodstuff such as ground meat, supplied through an extrusion plate of a grinder, which lays down a mass of ground meat in a continuous strip on a belt conveyor. The portioning device generates metered portions of ground meat by a cutting element which operates in cooperation with a fixed element located above the belt conveyor.

  • Patent number: 6287188
Abstract: The invention relates to a feeding device for a stuffing and dosing pump of a vacuum stuffing machine for alimentary paste products, preferably ground or extruded meats. More specifically, the feeding device provides two elical scroll thrusting elements, facing each other and placed in the space under the hopper in order to operate continuously on the meat paste, thrusting and compacting it in the direction and toward the inlet of the stuffing pump.

  • Patent number: 6036591
Abstract: The present invention relates to a process as well as to the related equipment for the production of strips, or of substantially thin pieces of tenderized meat, which are intended as ingredients for high-tenderness meat products in order to form a basic attribute of acceptability for the consumer, particularly because of the high sensorial quality perceived by the same consumer in chewing. Said process consists in subjecting the pieces of meat--advantageously cut in a preparatory device--to the pressing and tightening action of a tenderizing mechanical equipment, which changes their shape by submitting them to flattening sliding motions in several directions, in order to obtain a geometric shape like thin sheets of meat of complete tenderness and friability with both a higher nutritive quality and market value.
