A remainder portion is allocated to an intermediate position along the carcass, slab or loaf to be sliced from the carcass, slab or loaf before a butt end portion, gripped by a gripper of the slicing apparatus, reaches the slicing head. The butt end portion is pre-arranged to be the desired pre-selected portion weight or at least an acceptable pre-selected portion weight.
