  • Patent number: 6119589
Abstract: An apparatus for obtaining cheese material from milk has an elongate trough (11) which is provided at its one end with a filling zone (16) and, at its other end, a discharge zone (19). The trough has an inner wall (12) which is transportable at least substantially continuously between the filling zone (16) and the discharge zone (19). The volume of the trough can be subdivided by a number of partition walls (31, 31') which are matched to the trough cross-section, which can be coupled to the inner wall (12), and which are movable jointly with the Latter into cells (32, 32') which follow one another in the longitudinal direction. A clamping device (41) is associated with each partition wall (31, 31') and permits the inner wall (12) of the trough, which consists of a flexible material, to be clamped with slight deformation about the region (34) of the periphery of the partition wall confronting it.

  • Patent number: 4590833
Abstract: A slicing machine has a table defining a horizontal and flat support surface having an outer edge and a blade displaceable transversely along the edge. Thus when the blade moves along the edge a slice is cut from an elongated foodstuff projecting longitudinally over the edge. An automatic feed for the slicing machine includes a pair of feed elements centered on and rotatable about respective parallel longitudinal axes spaced apart transversely above the surface to either side of the foodstuff and each formed with a flat outer end immediately juxtaposed with the edge, and a helicoidal formation at least generally centered on the axis, engageable with the elongated foodstuff between the elements, and extending to the respective outer end. A drive rotates the elements about the respective axes for advancing the foodstuff gripped between the elements in a longitudinal transport direction along the surface toward the edge.

  • Patent number: 4321861
Abstract: In the production of cottage and similar fresh cheese, of the kind in which a milk coagulate is cut to curd granules of suitable size, the granular structure of the curd is maintained by stirring the cheese curd-whey mixture, the curd granulate is scalded by heating, and the curd granulate thus treated, after extraction of the whey in the meantime, is washed and cooled in water and iced water, the improvement that the cheese-whey mixture is subjected to successive processing operations in a continuous flow.

  • Patent number: 4306493
Abstract: In a process and device for the washing and cooling of cottage cheese, curd and the like, after scalding, granulate with the whey removed is introduced into a vessel, cooled and washed by means of a flowing washing and cooling liquid, and is then removed from the vessel for further processing. The improvement is provided that the granulate is continuously introduced into the washing vessel filled with washing and cooling liquid at a predetermined rate. The granulate is then moved on in this liquid to a removal position, and is finally continuously removed from the vessel at the same rate.

  • Patent number: 4108057
Abstract: The disclosure relates to a device for the continuous production of cheese material through coagulation of milk, comprising a horizontal trough-shaped container, whose ends extend funnel-shaped toward the flattened face edges, a flexible inner wall covering the container wall on the inside, which inner wall can be displaced along the wall of the container and runs as endless band around the face edges of the container, a device for feeding at the inlet and a predetermined amount of milk suitably pretreated for the manufacture of cheese, a transportation of such introduced milk from such inlet end to the outlet end by means of the flexible inner wall at such a velocity that during such a displacement inside the container the milk coagulates to a coagulate which can be cut and, further, comprising a cutting device at the outlet end of the container for cutting the coagulate to cheese curd, which is removed by the rotating inner wall over the face edge at the outlet end of the container for the purpose of furthe
