Abstract: A method for slicing pita chips in a conveyorized system is provided that includes transporting whole pita chips on a first conveyor belt from a first location of the conveyorized system to a second location of the conveyorized system and a third location of the conveyorized system, wherein transporting the whole pita chips from the second location of the conveyorized system to the third location of the conveyorized system, the whole pita chips are disposed in a gap between the first conveyor belt and a second conveyor belt, the first conveyor belt is below the whole pita chips and the second conveyor belt is above the whole pita chips, and slicing the whole pita chips into two halves at the third location of the conveyorized system by a slicing means, the slicing means including a blade and a blade guide.

Abstract: A method for forming pita chips in a conveyorized baking system is provided that includes forming dough into circular sheets having a diameter between about 1 inches to about 3 inches, and a thickness of about 1.5 mm to about 2.0 mm; proofing the circular sheets; baking the proofed circular sheets in a baking oven at a temperature above 500 degrees F. for a sufficient time to cause the proofed circular sheets to balloon and for upper and lower layers of the ballooned sheet to form into cupped shapes; splitting the upper layer from the lower layer to form a pair of cupped shaped pita halves; and toasting the pita halves for sufficient time to form scooped shaped pita chips.

Abstract: A method for making a hollow bagel product, including the steps of providing dough, sheeting the dough to a desired thickness, stamping ring-shaped pieces from the dough to form a stream of dough pieces, proofing the ring-shaped dough pieces and baking the proofed ring-shaped dough pieces in a conveyorized tunnel even at a temperature and for a time sufficient to cause the dough to blister between an outside diameter and an inside diameter of each ring-shaped section so as to form a hollow bagel.
