Patent number: 11819029Abstract: The present teaching relates to a method for forming rings from dough or other masses. A mass portion is positioned into a forming device on an abutment under a pressing device, wherein the pressing device has a centering ring, a displacement rod, a cut-out ring and a press ram. The centering ring is placed on the abutment, wherein the mass portion is laterally enclosed by means of the centering ring and is pressed by means of the press ram against the abutment into an approximately cylindrical form with a uniform thickness. A core hole is made in the mass portion by means of the displacement rod, so that a thin core of the mass portion remains between the abutment and the displacement rod. The core is punched out by the cut-out ring, and the press ram is lifted off the mass portion formed into a ring.Type: GrantFiled: May 31, 2019Date of Patent: November 21, 2023Assignee: KÖNIG MASCHINEN GESELLSCHAFT M.B.H.Inventors: Eduard Rauch, Florian Rossmann, Wolfgang Staufer, Hannes Stelzer

A number of covering panels are arranged on the outer frame, and a conveyor device runs through the interior of the proofing chamber. The conveyor device is designed to transport dough pieces through the proofing chamber. The conveyor device defines a number of transport planes arranged substantially horizontally or vertically, in particular horizontally or vertically. At least one profiled surface of the outer frame profiled sections which run at an angle to the gravitational direction and are arranged below the transport plane or the point of the transport plane arranged at the top in the gravitational direction is inclined in the direction of the interior.Type: ApplicationFiled: September 11, 2019Publication date: February 10, 2022Inventors: Thomas Rieger, Hannes Stelzer

Patent number: 10900823Abstract: A method for measuring the mass distribution along the width of a strip, in particular a dough strip, moved in the longitudinal direction of the strip and having a specified target width. At least two weighing cells are arranged at a distance to each other with respect to the width of the strip. The weight of at least one dough strand or dough piece having a width defined by the distances of the weighing cells is sensed. The mass of the partial pieces of the strip is determined on the basis of the distance of the weighing cells to each other, the position of the weighing cells along the width of the strip, the strip speed, and the measured values of the weight of the partial pieces sensed by the weighing cells, in particular over a defined time period.Type: GrantFiled: March 23, 2017Date of Patent: January 26, 2021Assignee: König Maschinen Gesellschaft m.b.H.Inventors: Wolfgang Staufer, Josef Hefner, Johann Thormählen, Dieter Sönnichsen, Hannes Stelzer, Gernot Maier

Publication number: 20200045984Abstract: A device for forming a dough strip, including a dough supply device, by means of which dough can be introduced into the device, a draw-in roller which can be rotated about its axis, a forming roller which can be rotated about its axis, a discharge roller which can be rotated about its axis, and at least one drive, by means of which the draw-in roller and/or the forming roller and/or the discharge roller can be driven. The axes of the draw-in roller, the forming roller, and the discharge roller are arranged parallel to one another in a mutually spaced manner, and a dough chamber is formed between the draw-in roller, the forming roller, and the discharge roller. The device has two cover shields which laterally delimit the dough chamber, in particular on the end faces of the draw-in roller, the forming roller, and the discharge roller.Type: ApplicationFiled: October 20, 2017Publication date: February 13, 2020Inventors: Hannes Stelzer, Eduard Rauch, Markus Radl, Wolfgang Staufer

Publication number: 20200029580Abstract: A method for weighing and transporting dough includes a weighing device having a weighing pusher which can be moved back and forth controllably in an output channel. A dough drum can be rotated or pivoted around its axis, having at least one receiving chamber for receiving dough and, in each receiving chamber, a weighing pad linearly guided in the receiving chamber in the radial direction of the dough drum and adjusted in the receiving chamber by an adjusting device. A kneading drum has a number of kneading chambers distributed uniformly around the periphery of the kneading drum.Type: ApplicationFiled: October 6, 2017Publication date: January 30, 2020Inventors: Robert Sauseng, Eduard Rauch, Hannes Stelzer
