    Abstract: A process for gaining meat from the bodies of slaughtered poultry and an apparatus for performing this process are described. Importance is attached to the processing in the region of the clavicle in preparation for the same, and the problem to be solved is to ensure that even in the case of a broken clavicle, fragments thereof do not remain in the breast meat. This problem is solved by introducing a block into the V-bifurcation of the clavicle, said block having a wedge-shaped configuration in plan view and its flanks being provided with groove-like recesses, in which can be flushly engaged the branches of the clavicle, so that they disappear in these recesses. By means of peeling knives guided over the flanks of the block, the clavicle can be peeled free at its outer contour without a risk of any broken fragments being grasped and removed.

    Abstract: A method for removing wings from poultry bodies and an apparatus for performing the method are described, in which a poultry body held on a conveyor is supplied to a separating mechanism. The latter comprises either two successive separating tools or only a single one. In the first case, the first tool of the two comprises a pair of circular knives arranged symmetrically to the path of the conveyor and which can be moved from the back of the poultry body into the bend between the latter and the humerus of the wing and cuts through the skin and ligaments, as well as the large wing tendons in the region of the body joint.

    Abstract: An apparatus for skinning poultry carcasses, particularly the breast portions thereof is described, from which the wings have been removed. It is the task to suggest a unit integratable into a processing line, which is able to remove the skin in one piece. To achieve this aim the skinning tool has a pair of cone-shaped, meshing and rotating toothed rollers, which can be moved apart mutually and reciprocally counter to spring tension without losing their engagement. By means of a sensor and as a function of the size of the particular poultry carcass, the complete unit is brought into its working position.
