  • Patent number: 8282978
Abstract: A method for making a bean-based oil substitute comprising the steps of making an aqueous liquid dispersion of comminuted beans in a stable flowable form, homogenizing said aqueous dispersion, and mixing an emulsifier with said comminuted beans before, during or after homogenization, said homogenized aqueous dispersion including less than about 2% weight of added oil, and drying the dispersion. Also, the substitute made by the method and a dehydrated refried bean product made using the oil substitute.
    Type: Grant
    Filed: January 28, 2011
Date of Patent: October 9, 2012
    Assignee: Basic American, Inc.

  • Patent number: 7413762
Abstract: A method for making a bean-based oil substitute comprising the steps of (a) homogenizing comminuted cooked beans in an aqueous liquid dispersion to form a homogenate, and (b) mixing an edible oil with said comminuted beans, before or after homogenization of the beans, to form a flowable stable dispersion oil substitute of the comminuted beans dispersed in a mixture of oil and water. The oil substitute is used to replace part of the oil in making dehydrated refried beans.

  • Patent number: 7306739
Abstract: A method comprising treating a potato wastewater stream containing suspended free starch particles with a potato starch-complexing emulsifier to form agglomerated starch particle-emulsifier complexes, and separating the complexes from the remainder of said wastewater stream. Also the separated starch complex suitable for human or animal consumption alone or in combination with other food ingredients. In various embodiments, the products comprise (a) at least about 2000 mg/100 g, BDS, glutamic acid; and/or (b) at least about 2500 mg/100 g, BDS, aspartic acid; and/or (c) at least about 10 g/100 g, BDS, total protein.

  • Patent number: 6555003
Abstract: A method for treating potato wastewater comprising the steps of pretreating a potato wastewater stream including suspended and dissolved solids with an alpha amylase enzyme to hydrolyze starch in the wastewater, ultra-filtering the enzyme-treated wastewater from step (a) to filter and remove a portion of the suspended solids in a first concentrate stream separated from the wastewater, and reverse osmosis-filtering the ultra-filtered wastewater from step (b) to remove at least about 70% of the wastewater dissolved and suspended solids in a second concentrate stream.

  • Patent number: 6485775
Abstract: A starchy food-based fat mimetic suitable for use in smooth-textured products, and methods of making the fat mimetic are disclosed. In one method, potato granules are comminuted to fine particles so that at least 90% by weight of the fine potato particles have a particle size of less than about 50 microns. The potato granules can be comminuted by dispersing the potato granules in an aqueous liquid to form a slurry and homogenizing the slurry. The homogenized slurry can be used as a fat mimetic, or it can be dried to form a potato powder which can be added to food products as a fat mimetic. Also, mimetics made by the same process from other starch foods such as fresh potatoes, potato flakes, corn, wheat, rice or beans.
