  • Patent number: 8029840
Abstract: According to this method, the products are produced by continuously co-extruding a bead coated with a starting base comprising hydrocolloids so as to form a skin by calcium gelation when the sausage passes into the elongated gelation bath, said bead then being shared out into portions placed in trays. Many beads are co-extruded by parallel co-extrusion heads, transit into a common gelation bath, are brought side by side so as to then be placed into portions by given means acting on all said beads so as to form batches of identical products perfectly grouped and aligned so as to be loaded into their packaging tray.

  • Publication number: 20110206814
Abstract: The invention relates to a method and a device for making portions of food products stuffed with a filling, formed of a main ingredient containing pieces of animal meat, in particular raw minced meat, surrounding the filling material. The method comprises: making, by extrusion, a main continuous stuffed vein (V1) including an outer layer (C1) of a main material surrounding an inner layer (G1) of a liquid, semi-liquid or pasty filling material; processing the main material before, during and/or after the production of said main vein in order to increase the cohesion of the animal meat pieces constituting said main material; portioning said main vein by nipping the outer layer at least transversally in order to expel the filling material of the inner layer, and by cutting said main vein at the nipped area in order to form portions (P1).

  • Patent number: 5618229
Abstract: The machine of the invention comprises downstream a squeezing device defining portions (P), successive pairs of first and second plates (1), 1') disposed parallel inside which the portions (P) are engaged. The first and second plates (1, 1') of each pair move forward in the machine by keeping their spacing and remaining longitudinally in coincidence, whilst moving transversally at the same speed but in opposite directions so as to make the portion (P) they enclose rotate. Secondly, the transversal movement directions are alternate between the first successive plates (1) and between the successive second plates (1'). Consequently, the continuous filled-up casing (B) driven by the pairs (1, 1') advances inside the machine in the form of successive portions (P) between which a twist is formed.
