    Abstract: Psyllium-containing filling compositions having excellent texture, mouthfeel, and palatability. These filling compositions essentially comprise psyllium fiber and higher levels of glycerin, and preferably comprise sweeteners and flavorants. Furthermore, they have water activities ("A.sub.W ") below about 0.35. The compositions are ingested to control constipation, bowel function, blood cholestrol levels, glood glucose tolerance, and/or appetite, as well as for prophylaxis and treatment of intestinal disorders.

    Abstract: A process for controlling the size and texture of baked cookies through the use of specific mixing procedures is disclosed. In particular, adding the required total amount and type of sugar in varying portions at different points in the dough mixing sequence permits control of the size and texture of cookies having distributed therein discrete regions of crumb-continuous storage-stable distinct textures.
