The burner is centered in the double helical coil and disposed above the inlet and the outlet. The containment structure has a closed bottom end and a flue opening at an upper end. The containment structure is positioned above the inlet and the outlet to enclose the double helical coil and the draft-type burner. The burner heats the continuous tube to evenly transfer heat to the fluid while the fluid flows through the continuous tube from the inlet to the outlet.

    Abstract: A process for controlling a combustion air delivery system of an oil fryer, the process comprising: (i) activating the combustion air delivery system; (ii) determining if a current target RPM is able to activate an air pressure sensing switch of the combustion air delivery system; (iii) if the current target RPM is able to activate the air pressure sensing switch, then a heating controller uses the current target RPM for heating; and (iv) if the current target RPM is not able to activate the air pressure sensing switch due to fan filter clogging or any other reduction in air supply in the combustion air delivery system, then the process for controlling the combustion air deliver system will conduct an initial calibration sequence to determine a new higher target RPM which will increase the air supply in the combustion air deliver system.

A detector senses the second platen making contact with a food product disposed on the first platen and provides a signal. A controller uses the signal to measure the travel distance of the second platen. The product thickness is a function of the travel distance, which is used to select a cooking procedure for the food product. The controller then executes the selected cooking procedure to cook the food product.
