  • Publication number: 20060019014
Abstract: A method for manufacturing a freezer-to-oven biscuit flatbread. A continuous sheet of biscuit dough is perforated and sliced to form a perforated dough pad. The perforated dough pad is directed through a freezing tunnel to freeze the dough pad. The frozen dough pad is sufficiently rigid to facilitate packaging and storage. In addition, the frozen dough pad is easily separated or broken along the perforations to form frozen biscuit units. The frozen biscuit unit can be baked such that a baked biscuit unit can be prepared and consumed as a side item, a dessert item or as a sandwich carrier.
