  • Patent number: 6066354
Abstract: The present invention relates mainly to a method of preparing foodstuffs based on fish flesh [i.e. the flesh of fish proper, and/or shellfish], and to foodstuffs obtained by this method. In the method of the invention, the fish flesh is mechanically mixed or kneaded to a moderate extent, i.e. the mechanical action avoids any significant irreversible spoiling of the fiber structure of the flesh, this action taking place in the presence of edible water-retaining compounds, in particular edible hydrocolloids. Mixing and/or kneading is continued until a uniform distribution is obtained in the mass of fish flesh of the water-retaining compounds and any other additives. The present invention is particularly applicable to the food industry. The present invention is mainly applicable to transforming fish proper, as distinct from shellfish.
