    Abstract: A method of enzymatic extraction of chitin is realized in a single step wherein the chitin is obtained by enzymatic hydrolysis of raw material constituted by animal biomass including chitin, the enzymatic hydrolysis using an enzyme active in acid medium. Also disclosed is a process of optimization of the method of enzymatic extraction of chitin, as well as the chitin susceptible to be obtained by the method of enzymatic extraction.
