Abstract: Provided are a mutant glycosyltransferase UGT76G1 and a use therefor, the catalytic activity, the substrate selectivity, and/or the substrate specificity of the mutant glycosyltransferase UGT76G1 having been changed. Mutation at specific points can promote the catalytic activity for 1,3-glycosylation of a substrate containing 1,2-diglucosyl (sophorosyl), and weaken the catalytic activity thereof to perform 1,3-glycosylation on a glucose monosaccharide substrate base. Also provided are mutations that weaken the catalytic activity of glycosyltransferase UGT76G1, able to increase accumulation of a specific stevioside intermediate.
