Abstract: The present inventive concept relates generally to simulating the barrel aging or finishing process of alcohol-containing products in a rapid manner using various microorganisms to impart flavors and aromas during the aging or finishing process. Products and methods used in the process of aging or finishing the alcohol-containing products are also provided.

Abstract: Compositions of matter are provided that include chitosan and a modified carbohydrate. The modified carbohydrate includes a carbohydrate component and a cross linking agent. The modified carbohydrate has increased carboxyl content as compared to an unmodified counterpart carbohydrate. A carboxyl group of the modified carbohydrate is covalently bonded with an amino group of chitosan. The compositions of matter provided herein may include cross linked starch citrate-chitosan and cross linked hemicellulose citrate-chitosan, including foams thereof. These compositions yield excellent absorbency and metal chelation properties. Methods of making cross linked modified carbohydrate-chitosan compounds are also provided.

Abstract: A carbohydrate-gypsum composite for use as a bonding agent in manufacturing gypsum construction materials is disclosed. The composite includes a carbohydrate substituted with sulfate moieties such as cellulose sulfate and a crystalline calcium sulfate dihydrate. The composite may be used in bonding paper cover sheets to a gypsum core to form a gypsum wallboard. Also disclosed are methods of making the composite and methods of making gypsum wallboard with the composite.
