Abstract: Apparatus is disclosed for moulding pieces of dough into long thin cylinders. To avoid an irregular shape of the final product and/or a non-uniform interior dough structure, the pieces of dough are rolled over a working surface while pressure is exerted on each half thereof, distributed over a plurality of adjoining transverse zones, by elements of the working surface. Each of the elements is laterally movable substantially in proportion to the local dough migration. For this purpose the invention provides a compression bed for use in an extender over a movable carrier. The side of the compression bed which faces the carrier is constituted by elements symmetrically arranged relatively to the longitudinal median plane of the compression bed and journalled for lateral movement.

Abstract: Dough tray for a proofer, provided with two head walls with means for coupling the dough tray to a chain or the like, an element transporting a plurality of dough trays through the proofer and with a carrier frame extending between the head walls for at least one endless strip of cloth or the like material with a part receiving dough lumps and sagging between two frame portions, provided with positive drive means for displacing the cloth over the frame.

Abstract: A dough make-up machine comprising a rolling-out station having a roller and a carrier for dough pieces, as well as a rolling-up station, while in front of the rolling-up station, there are disposed a moistening roller having a moisture-retaining, roughened surface and means for moistening the roller surface.

Abstract: A dough rounding machine provided with a vertical rounding drum and with a trough extending helically or spirally about the drum, said trough being composed of a bottom and a bowl spaced apart from the drum, while the bottom comprises flat bottom plate sections successive in helical direction, abutting the drum and attached to a frame surrounding the drum, while the bowl is composed of bowl sections likewise successive in helical direction and fixable on the bottom plate sections with variable distance to the drum, whereby each bowl section is designed as a wall plate which, with a bottom edge that completely abuts the bottom plate section, is movable over the bottom plate section towards and away from the drum with maintenance of said abutment.

Abstract: A dough-rounding machine, including a substantially horizontal trough defined by a carrying surface at the bottom and a pair of dough kneading plates which diverge upwardly from the carrying surface to form the sidewalls of the trough, has a drive mechanism designed to reciprocate the kneading plates in opposite directions laterally and longitudinally of the trough. The carrying surface may be movable in the longitudinal direction of the trough to advance a piece of dough through the machine.

Abstract: A method of rounding lumps of dough, in which one lump of dough is contacted with two faces including an angle and in which the lump of dough is subjected to a frictional kneading effect by moving the two faces relative to one another, wherein the lump of dough is placed on a reciprocable surface and is alternately contacted with two surfaces disposed above said surface and including a rounding path.
