  • Publication number: 20150359234
Abstract: Moulding device for moulding three-dimensional food products from a mass of foodstuff which can be transferred by pumping, for example a meat mass of minced meat. The device comprises a moulding drum (16) having a peripheral surface contain ing multiple series of cavities (44) extending in the peripheral direction. The device comprises a mass feed device which is arranged in a filling position with respect to the peripheral surface of the moulding drum. The peripheral surface is embodied as a profiled peripheral surface having a shaping profile. Multiple shoe segments (42) are provided which are arranged next to one another and which have a profiled inner side with a profile which is in meshing engagement with the shaping profile. The shoe segments have freedom of movement with respect to one another, at least in the direction of the rotation axis, in order to each remain individually aligned with respect to the profile of the section with which the inner side of the shoe segment is in meshing engagement.

  • Patent number: 9044022
Abstract: The invention relates to a treatment device for treating food products using conditioned treatment fluid, comprising a housing (10), which defines a treatment space (18) and is provided with an inlet (12) for introducing products to be treated into the treatment space, and an outlet (14) for discharging treated products from the treatment space, with the treatment space (18) being in open communication with the environment, a conveying means (16, 20) for conveying the food products from the inlet through the treatment space to the outlet, with the conveying means (16; 20) between the inlet and outlet following a helical conveying path (26) comprising several turns one above the other, circulation means (40) for circulating treatment fluid through the treatment space, conditioning means (56; 57) for conditioning the treatment fluid.

  • Publication number: 20150044335
Abstract: In a method for moulding food products from a pumpable foodstuff mass, use is made of a moulding device with a mould drum provided with mould cavities having a fill opening for the introduction of foodstuff mass. A mass feed member transfers mass into passing mould cavities. A pump is connected to the inlet of the mass feed member. Product removal takes place downstream of the fill position. The operation of the pump and the rotation of the mould drum are controlled in combination with the design of the mould cavities pattern on the drum and of the mouth of the mass feed member such that in the method all mould cavity filling events during a revolution of the mould drum are performed in sequential order.
