    Abstract: Methods of producing fungi-based textured protein food products are described, the methods generally including providing a fungi-based protein source, mixing the fungi-based protein source with other ingredients (including secondary protein sources) to form a blend, and extruding the blend. The method may include performing the extrusion using operating parameters that result in denaturing the secondary proteins while leaving fungal fibers of the fungi-based proteins intact. Fungi-based textured protein food products are also described, the fungi-based textured protein food products including intact fungal fibers aligned with networks of denatured non-fungal protein formed about and around the fungal fibers.

The bound textured substrate can be used as a high protein food, such as meat substitutes, meat analogues, or seafood analogues. In some embodiments, the mycelium-producing fungi is used to bind together multiple textured substrates to form larger composite food products.

    Abstract: Disclosed are high moisture extrudates (HMEs) and high moisture meat analogues (HMMAs), generally made from the HMEs, containing acidic protein from plants precipitated at acidic pH. In some examples, the protein is from pea. In some examples, HMEs are disclosed that contain 100 percent of the plant salt-precipitated protein (before extrusion; after extrusion, product contains water). Also disclosed are meat analogues that contain the HMEs. In some examples, the meat analogues contain the HMEs along with additional plant protein that is not an ingredient of an HME.
