    Abstract: The present invention is directed to the modification of bovine milk to simulate human milk protein composition which can be used in infant formulas. This is accomplished by low temperature ultrafiltration or microfiltration of bovine milk which has been pretreated at about 4.degree. C. for 4 or more hours for micellar dissociation of .beta.-casein, using either a 100,000 molecular weight (M.W.) cut-off or 0.1 .mu.M to 0.2 .mu.M membranes; permeates are obtained in which the .DELTA..sub.s -caseins are eliminated or substantially reduced; and preferably the .beta.-lactoglobulin is reduced to levels of 4% or less through pH adjustment and sodium chloride addition.
