In certain aspects, methods are provided comprising delivering microencapsulated probiotic bacteria to the gastrointestinal tract of a ruminant animal. Microencapsulated probiotics for delivery to the gastrointestinal tract of a ruminant animal in order to reduce E. coli O157:H7 shedding are also provided.
