    Abstract: Method and apparatus for industrial microwave (MW)-assisted thermal sterilization and pasteurization using solid-state MW generators. One or more phased array generators heat packaged foods or liquids conveyed in transport carriers through a processing liquid providing supplemental temperature control and hydrostatic pressure. Generator output signals are computer controlled, allowing phase and power-ratio modulation to both adjust interference patterns within heating cavities and shift focus of heating energy.

The method also includes applying microwave energy to the item while the item is immersed in the immersion fluid and subject to the hydrostatic pressure of the immersion fluid. The hydrostatic pressure of the immersion fluid prevents the water content of the item from causing steam explosion in the item while the microwave energy is applied. The method further includes heating the item immersed in the immersion fluid to a target temperature with the applied microwave energy, the target temperature being sufficient to achieve sterilization or pasteurization of the item.

    Abstract: An improved transport carrier for use in a fluid filled microwave sterilization or pasteurization system includes patterned electrically conductive layers or carriers which extend over or under items to be sterilized or pasteurized and occlude 1 to 30% of the area in the direct path of microwave emissions to the items. When the patterned electrically conductive layers or cages are present, heating of the items to be sterilized or pasteurized is substantially more uniform compared to when there is nothing occluding or otherwise interrupting the direct pathway from the microwave emitters to the items. Enhanced automation is achieved for sterilization or pasteurization systems by configuring the preheating and cooling sections as loading and unloading sections. Furthermore, superior fluid temperature control between the loading, heating, and unloading sections is achieved using double gates or dividers between sections.

A frame can be used to assure stability of orientation in a pouch while bracing can be used to assure stability in a tray. The properly configured food tray or pouch can serve as an accurate witness device for food items being processed in a similar manner under microwave heating for, e.g., sterilization or pasteurization.
