The cutting unit includes a perforated disk and a drivable cutting knife body with cutting edges which interact with the perforated disk. The cutting knife body has additional cutting edges which extend approximately in radial direction. The additional cutting edges interact with approximately radially extending counter-cutting edges of the machine housing. The additional cutting edges may be provided in the form of grooves on the free ends of arms of a star-shaped cutting knife body. The counter-cutting edges may be provided on a housing ring which can be easily replaced and repaired. The additional cutting edges and the counter-cutting edges do not contact each other. Patent number: 4602402Abstract: In a sausage stuffing machine if the stuffed portion of a sausage casing bursts, for example in an area which is squeezed for forming a sausage end, the meat filling continues being discharged through a filling tube but is no longer capable of pulling off the gathered-up casing from the filling tube. With the further run of the pump, the sausage meat is spilled. By keeping the gathered-up casing, by means of an advance mechanism, compressed into a "block" and displacing it toward the mouth of the filling tube or toward a braking ring, proportionally to the stuffing of the casing, this advance can be transmitted through a motion transformer, to a pulse generator by which, with a constant advance, pulses are delivered at constant intervals. The pulses are received by a counter which is connectd to at least the drive of a feed pump for the sausage meat. Patent number: 4023735Abstract: Both large and small meat pieces and small meat pieces are processed by treating the pieces having relatively large bones to a coarse crushing operation to crush the bones and the meat to smaller sizes and discharging these smaller sizes into a preliminary fine crusher along with small meat pieces and smaller boned meat pieces of from 5 to 10 mm in size. Meat which is treated in the preliminary fine crusher is reduced to bone and meat sizes of from 0.5 to 1 mm. In addition, salt and ice is supplied to the preliminary fine crusher in order to dissipate part of the heat, preserve the meat and to add seasoning thereto. The sizes which are reduced are then directed with the salt, ice and water to a final fine crusher, where the products are reduced to an emulsified paste. The paste is then transmitted to a decanter in which the bone and fiber parts are separated from the meat, water and salt emulsion.
