  • Patent number: 7351134
Abstract: A meat dressing and boning method and a system thereof can dress and bone meat and carcass in short work-hours, while avoiding bacterial contamination. The system includes a clamp mechanism for holding a meat block with bones, a hanger connected to clamp mechanism and movably suspended from a support rail, and a guide rail or rails having a tubular or rod-like configuration for supporting the meat block positioned along and below the support rail. The hanger has at least two pivots to allow the meat block held by the clamp mechanism to rotate about at least first and second axes, which are perpendicular to each other. The meat and carcass can be broken up and boned while being moved along the support rail, with the swinging directions of hanger regulated by the guide rail or rails.

  • Publication number: 20080020693
Abstract: A deboning method and a deboning apparatus is provided whereby a meat block at the humerus part having a part of the scapula remaining therein, which corresponds to the shoulder part of a back split block of an animal meat (for example, beef, pork, horse meat, goat meat or poultry meat), can be completely automatically deboned after a simple pretreatment by human hand.

  • Patent number: 6106384
Abstract: The present invention, in deboning process for a pig thigh in which a pig thigh held by gripping on a transport line is sequentially deboned starting from a hind shank, comprises preliminary processing steps of: gripping the ankle side section of a work by transport/processing means; removing a hip bone, and a sacrum and a caudal vertebrae of the gripped work; and cutting-in for a hind shank and a femur, and the process further comprises the steps of: stripping a meat section around the hind shank after it is processed in the preliminary processing steps; exposing a fibula to detecting the base position of a fibula head as a first sensing step; stripping a meat section around above a joint and cutting an organic tissue exposed by the stripping for separation of leg section muscles; cutting a patelliform bone related section; stripping for the femoral region and detecting the base position of a femur head as a second sensing step; cutting a femur head related section; and separating by cutting the meat section
