    Abstract: The present invention discloses an enzymatic synthesis method of 1-palmitic acid-2-oleic acid-3-triglyceride stearate, belonging to the technical field of structured lipid processing. In the present invention, a crude product rich in 1-palmitic acid-2-oleic acid-3-triglyceride stearate is obtained by reacting for 2-10 h at 20-70° C. with 1-palmitic acid-2-diglyceride oleate as an acyl acceptor, stearic acid or a derivative thereof as an acyl donor and a lipase as a catalyst, wherein the reaction system is an inorganic or organic solvent reaction system. The present invention provides a highly efficient enzymatic synthesis method of POS, thereby resolving the disadvantage of low POS content and limited use provided by the current synthesizing product of structured lipid. The technology adopted by the present invention certainly has an application prospect in the process of preparing cocoa butter equivalents.

    Abstract: The present disclosure discloses a method for increasing the usage efficiency of a lipase in the enzymatic reaction, belonging to the technical field of food processing. In the present disclosure, the peroxide value of raw materials required for enzymatic synthesis of a structured lipid is reduced by a distillation method or an adsorption method, and then the raw material and a lipase undergo catalytic reaction to synthesize the structured lipid, so as to maintain the activity of the lipase and increase the reuse rate of the enzyme. The distillation method includes deodorization and molecular distillation. The present disclosure provides a method for manufacturing a structured lipid by a high efficiency and low-cost enzymatic synthesis, addressing to the issues such as large enzyme consumption, expansive cost, low enzyme utilization rate in the traditional industrial production. Therefore, the method provided by the present disclosure has certain development potential and practical significance.

    Abstract: Disclosed is a method for qualitative and quantitative determination of key substances in mixture based on terahertz spectrum. Terahertz spectrum of a reference mixture is trained through an SVR algorithm, and predicting parameters of key substances in the mixture to be determined after a model is generated. According to the method, an initial pure spectrum corresponding to each composition in the mixture does not need to be separately determined, no limitation on the number of samples contained in the mixture, and no limitation on frequency range to be determined, and the proportion requirement of the mixture in the early test stage is not limited, and the SVR model does not need to be re-trained after a database is formed in the later stage, and the result can be obtained immediately after the spectrum of item to be determined is introduced into the algorithm model.
