    Abstract: A process for isolating the metalloprotein lactoferrin and the enzyme lactoperoxidase from milk and milk products on an industrial scale is disclosed. The process includes the steps of adsorbing these proteins to a cation exchanger by passing milk or the milk derivatives over the cation exchanger at a high superficial velocity (more than 500 cm per hour) and at a high liquid load (100-600 bed volumes per hour); eluting these proteins, separately or simultaneously, by elution with one or more salt solutions, so as to form one or more eluates; and optionally followed by drying of the eluates.

    Abstract: The invention relates to a spray dried lactose suitable for use as component of tablets and to a process for preparing same. The lactose is predominantly crystalline and contains at most 50% by weight of amorphous lactose. At least 50% by weight of the crystalline lactose consists of particles below 50 .mu.m. The preparation process comprises a step of suspending crystalline alpha-lactose hydrate at 0.degree.-90.degree. C. in a saturated lactose solution, and a spray drying step. The temperature of the suspension is kept substantially constant until the time of spray drying in order to minimize crystallization and dissolution events.

    Abstract: A process for preparing stable anhydrous lactose products comprising the compound crystal form of the alpha form and the beta form of lactose. An unstable anhydrous lactose product is heated, at atmospheric or sub-atmospheric pressure, at low water vapor pressure, and while avoiding overheating, to a temperature in the range of from 100.degree. C. to 220.degree. C., and the product is kept at that temperature until crystallization of the compound crystal form of the alpha form and the beta form of lactose occurs.
