    Abstract: Disclosed is a process for the preparation of ground, processed and fermented bean curd (i.e., tofu) using probiotic lactobacillus. Bean curd is prepared from micronized full-fat soy flour without separating bean-curd dregs. Probiotic lactobacillus and transglutaminase enzyme are used for fermentative production of bean curd while no artificial coagulant is employed.
