    Abstract: A method and apparatus for cutting sausages squeezes the meat inside the casing by a crimping wheel to move the meat emulsion away from the linking point to provide sufficient casing to close the ends of the proposed links and to prevent bursting of the casing. This is accomplished by passing the unlinked sausage strand over a crimping wheel to crimp the proposed linking points, reshaping the sausage strand at the linking points, and then subsequently cutting the precrimped link points.

    Abstract: A device for separating bony material, such as a rib, from a meat piece, for example a half belly piece, comprising a frame (1), wherein the meat piece is fixed,at least one carrier (2) supported by the frame,an elongate element (3) formed into a loop, a portion of which is arranged movably in the carrier, anddrive means (23) connected to the carrier (2) for setting the element (3) into movement relative to the carrier, such that said loop-shaped elongate element can be arranged around a rib by placing it from one end thereof into the meat piece and moving it along the rib, whereas simultaneously a tensile force perpendicularly onto the rib is exerted, whereupon the rib piece can be separated from the meat and membranes and owing to the loop-shaped element as much meat as possible will remain behind in the meat piece.

    Abstract: A method and device for injecting liquid substances such as brine or paste into a piece of meat. During injection, the piece of meat, which is conveyed over a row of spray nozzles, is held in contact with a row of the nozzles, preferably by means of a pressure roller. The rotational shaft of the roller is situated opposite the row of spray nozzles. This allows for deforming the meat to a slab of predetermined thickness and prevents the injection stream from being atomized prematurely, that is, outside the meat. This results in a homogeneous distribution of the brining liquid in the meat.
