    Abstract: A method is disclosed for decolorizing a muscadine pomace grape extract by processing the clarified extract by ultrafiltration through a 500-5000 kDa microfiltration membrane to obtain a first permeate in which flavor components are removed. The retentate is subjected to ultrafiltration through a 25-100 kDa ultrafiltration membrane to obtain a second permeate and a second retentate. The polymeric condensed tannins are removed in the second retentate and the second permeate is the decolorized extract having increased levels of polyphenols and lowered levels of sugars and condensed tannins compared to the first retentate. The decolorized extract can be incorporated into skin care compositions, which can also include beta-glucan and grape seed extract. The skin care compositions can and applied to the skin to maintain healthy skin without discoloration. In some embodiments, the compositions are used for reducing inflammation in the skin, including inflammation that results from exposure to ultraviolet radiation.

The first retentate is reconstituted and subjected to a second ultrafiltration at a higher molecular weight cutoff to produce a second permeate (Fraction B) that is enriched in low molecular weight polyphenols, and a second retentate (Fraction C) that is enriched in seed fiber.     Abstract: Muscadine grape extracts are disclosed that have antioxidant properties. The extracts are a mixture of extracts from bronze and purple muscadine grapes that unexpectedly increase the solubility of ellagic acid in the mixture. Solvent extracts are obtained in some examples by water extracting the pomaces of the grapes from which the juice has substantially been removed. Further surprising increases in ellagic acid solubility can also be obtained by adding an additional source of anthocyanins to the extract, for example by including in the composition an extract of whole purple muscadine grapes from which substantial amounts of the juice have not been removed. Other additional sources of anthocyanins include blueberries, blackberries and raspberries; the additional source of anthocyanins can be obtained from a fruit processing waste stream to increase the efficiency of the production process.
