  • Patent number: 11505756
Abstract: The present invention concerns an ethanol with an alcohol by volume between 85% and 99%, and comprising a Hydroxy-Alkyl-Cellulose, the dosage of Hydroxy-Alkyl-Cellulose being limited so as to obtain a dynamic viscosity of less than 100 Pa·s. This invention also concerns the use of such ethanol as combustible for cooking a foodstuff, or part of a foodstuff, in particular for safely cooking in the immediate vicinity of the person for whom the food is intended, so as to use cooking as a show.

  • Patent number: 9017746
Abstract: The invention relates to a method for obtaining a product in the form of deep-frozen granules, particles of beads having a high dissolved-gas content from a liquid, semi-liquid or paste-like matrix, that comprises two subsequent steps: a matrix gasification step that comprises the incorporation of gas at a pressure higher than 2 bars; and a quick deep-freezing step using a cryogenic fluid.

  • Publication number: 20060141115
Abstract: The invention relates to a method for cooking food positioned in a receptacle, characterized in that: a predetermined volume V of denatured ethanol with a proof strength of at least 80• is poured on to the food, the ethanol is ignited and left to burn completely. The invention also relates to apparatuses for implementing the method, such as, for example an apparatus formed of at least a half-tube (3) closed off at each end by half-plates (4) in the shape of half-discs, each comprising a central cut-out (5) for guiding a skewer (2) or half-skewers (8) holding the food that is to be cooked.

  • Patent number: 6685835
Abstract: In a method of filtration, a liquid to be filtered is brought into contact with the surface of a filter medium and is passed through the filter medium. A supernatant liquid layer is created on the surface of the filter medium, and the upper level of the liquid layer is suitably controlled. A hydraulic path is organized in the liquid layer, and a stream of the liquid to be treated is brought to the inlet of the hydraulic path. Liquid that has passed through the filter medium is recovered for n cycles by reinjecting the liquid into the supernatant layer at the outlet of the hydraulic path, producing in a section of the path a meeting of two opposed streams. The treated liquid is then drawn off after n cycles.
