A cap is connected to the case by a hinge to permit selectable movement of the cap between an open position, wherein access is provided to the open end of the case, and a closed position, wherein the cap prevents access to the open end of the case. A seal is connected to one of the cap and case. The seal is engageable with the other of the cap and case when the cap is closed to form a barrier that maintains a sterile environment inside the package. The seal can be repeatedly made and broken whenever the user closes or opens the cap, respectively. One of the case and cap has a latch and the other has a receptacle for receiving the latch to releasably retain the cap in a closed position. The latches fit into the receptacle to prevent lateral forces from distorting the cap when the cap is closed. Patent number: 4798939Abstract: A pressurized batch cooking pot has an encircling radiant heater which has a high temperature insulation shell with end abutting the pot and a center portion spaced from the pot. A spiral coil is firmly embedded within the inner wall of the insulation shell with the outer surface of the coil turns opposed to the pot exposed and flattened. The oil level in the pot is somewhat above the uppermost end of the heating coil. The air gap between the coil and the pot is selected for efficient energy transfer. The spiral coil is formed in vertically spaced rows circum-ferentially distributed about the pot. Integral end connections are formed substantially rectangular with a plurality of coil turns integrally joined to the turns of the parallel rows by a similar integral U-shaped wire. The pot is a relatively elongated unit having a length to diameter ratio of at least 1.6 to 1. The outside of the sidewall of the pot has a black body coating. Patent number: 4768426Abstract: Cooking oil is contained within a pressurized pot having a radiant heat to raise the oil temperature to the cooking temperature. An oil reservoir is located adjacent and below the pot, with a releasable cover for addition of oil and a low temperature heater. The pot has a bottom prefilter with a perforated basket. A drain line connects the prefilter reservoir with two series connected solenoid valves. A micron filter is connected by a fill line to a fill pipe of the pot and between the solenoid valves. A pump unit in the fill line moves the oil through the system. A low volume of oil is used for cooking of product, and advantageously is approximately in the ratio of less than two pounds to one pound of product. Oil absorbed by the product is periodically replaced with fresh oil from the reservoir. A pressurized deep oil cooker has a cover unit and includes a clamp bar pivotally connected to one side of a cooking pot. A mechanical hook unit couples a hook member on the free end of the bar to a pin. A plate cover has a D-shaped seal in a dovetail groove and abutts the upper edge of the pot. The cover is secured to the cam by a slotted connection permitting limited movement of the cover relative to the bar. Patent number: 4153044Abstract: A low profile backshelf type hood having back, top, and side walls is either floor mounted or wall mounted to form a hood enclosure partially surrounding a source fo fumes or vapors. Outside untempered forced air is directed in through the top of the hood and up to the top front of the hood, where it is directed backwardly and downwardly through the enclosure as a narrow curtain at high velocity toward an exhaust opening. A filter is located within the opening and angularly oriented such that the high velocity air curtain engages the upper third of the filter and perpendicularly to the filter. Fumes arising upwardly pass into the exhaust opening along with the injected air, with the exhausted fumes and air then being drawn upwardly and out through an exhaust channel within the hood enclosure ductwork leading to the exhaust fan. An exhaust filter exchanger is mounted in the exhaust chamber and has at least two filter holders each for holding at least one filter, with one of the filter holders being in an operating position across the opening in the wall between the two chambers and the other of the filter holders being in a reserve position within the exhaust chamber. The filter exchanger apparatus allows an attendant to retract, rotate, and extend the filter holders (and filters therein) to exchange their positions. Ambient air from outside the room being ventilated is forced into an insulated intake chamber within the exhaust hood through a relatively narrow longitudinal slot at the bottom of the intake chamber, thence directed rearwardly and upwardly across a fume collection chamber, through a grease filter, and into an exhaust chamber from which the fumes are exhausted to the atmosphere by a fan. The outside air is forced through the slot in a fast moving narrow stream to form an air curtain across the fume collection chamber with minimal mixing of the fume laden air and the air curtain.
