Abstract: The invention relates to compositions for oral administration which are provided in the form of gelled oil-in-water emulsions, to methods for their preparation and to their use as pharmaceuticals and nutraceuticals. In particular, it relates to an orally administrable, gelled oil-in-water emulsion in unit dose form, wherein the gelled oil-in-water emulsion is a self-supporting, viscoelastic solid having a water activity in the range of about 0.4 to 0.9 and which comprises a gelled aqueous phase having a pH of 3 to 5.5, and wherein the gelled aqueous phase comprises a gelling agent which is a low-methoxy amidated pectin and the gelled oil-in-water emulsion is stabilised by an emulsifier which is a phospholipid or mixture of phospholipids.
