  • Publication number: 20060144070
Abstract: The aim of the invention is to improve the performance of heat exchangers such that lost heat is discharged from a cabinet or device, whereby the rise of the inner temperature for each discharged watt of power loss is only slight. The invention also relates to a flat refrigerating set. The temperature of the heated air (SL,) can be reduced in the counterflow (L4;L3;k1;k2 . . . ) by means of counterflowing cooling air (KL) without the cooling air physically entering into contact with the heated air flow (L1,L3,L5) that is to be cooled. The air flow to be cooled (SL) can be supplied to several parallel first chambers (k1,k3,k7) via an inlet area (13). The parallel first and parallel second chambers alternate in the direction of the height or density (h) of the refrigerating unit. The alternating chambers (k1,k2,k3,k4, . . . ) also extend into a section of the flat cooling unit (l13), which is located between the inlet area (13) and a closer end (40,41) of the refrigerating unit.

  • Patent number: 6305275
Abstract: An apparatus for preparing a mousse which contains pieces of chocolate has a first line of apparatus members which are associated together and suitable for transporting, sterilizing and overrunning a milk-based mixture, which is suitable for being overrun and for preparing a mousse, and for transporting an overrun mixture and has a second line of apparatus members which are associated together and suitable for transporting and sterilizing a chocolate composition and for transporting a sterilized chocolate composition, and the lines separately feed a nozzle and contact zone tube assembly. In one embodiment, passages in the nozzle are positioned and configured so that, in operation, overrun mixture is delivered into the nozzle and an amount of chocolate composition is delivered into overrun mixture so that the composition has a form of a strand in the overrun mixture, and a cutting system is connected with the contact zone tube for cutting the strand into pieces.

  • Publication number: 20010007692
Abstract: The refrigerated product is based on at least one mousse (2, 3), the mousse containing 2 to 10% by weight of chocolate (4) and the chocolate being sterilized and containing 50 to 70% of fats, 30 to 50% of cocoa powder and 1 to 10% of sugar.

  • Patent number: 6231902
Abstract: Sterilized pieces of chocolate are contained in a mousse in an amount of between 2% and 10% by weight. The chocolate includes, by weight, from 1% to 10% sugar and also includes from 50% to 70% fats and 30% to 50% cocoa powder.

  • Patent number: 5820913
Abstract: A composite product of a milk-based mousse and of chocolate product pieces is prepared. To do so, a chocolate product of a fat, cocoa butter and sugar in amounts, by weight, of from 50% to 70% fat, of from 30% to 50% cocoa powder and of from 1% to 10% sugar, is sterilized and a milk-based mixture, which is suitable for being overrun and preparing a mousse, also is sterilized, the sterilized mixture is overrun to obtain the mousse, and the sterilized chocolate product is delivered to and combined with the mousse so that the mousse contains pieces of the sterilized chocolate product therein and so that the pieces are in an amount of between 2% and 10% by weight, and then, the composite product so obtained is introduced into containers refrigerated.

  • Patent number: 5551207
Abstract: An apparatus for preparing a layered food product has a station for introducing a first food component into a container and a station for introducing a second food component into the container on top of the first food component. The apparatus also has a unit for metering CO.sub.2 snow onto the first food component and a suction unit for removal of residual CO.sub.2 snow before introduction of the second food component into the container, the metering and removal being effected during passage of the first food component in the container through a tunnel in which air conditions about the container may be controlled.

  • Patent number: 5494692
Abstract: A multilayered food product, which has an upper component which has a density which is at least 0.2 kg/dm.sup.3 greater than a density of a lower component, is prepared by introducing a first food component into a container and within 30 seconds after introduction of the first food component applying a CO.sub.2 snow to a top surface of the first food component in the container for frosting the surface and removing residual CO.sub.2 snow from the surface and introducing a second food component into the container onto the frosted surface of the first food component.
